The transition of August to September is the perfect time to start planning to preserve the harvest, for an abundance of pantry items in the winter. We are here to serve that purpose! Two Farmers Farm has listed 10lb flats of tomato seconds for Veggie-GO customers planning to can and put tomatoes by this month. Over the past year and a half, we have been able to donate SNAP credits each week to SNAP/EBT eligible customers to purchase local foods as well as deliver donations to community resource centers responding to growing food insecurity. We are seeing an increased need to distribute food to our community at this time. We are humbly asking for your donations to enable us to continue to meet the needs of our neighbors. Mushroom and Greens Ramen
Ramen is one of my favorite rainy day dishes and since mushrooms grow best in wet weather, it seems like the perfect pairing to add some earthiness to this dish. I also love adding grated daikon radish to many noodle dishes, including this one. It’s referred to as “Oroshi” in Japanese and is sometimes served on cold noodles but I think it adds a nice depth of flavor to this ramen. -Perri Krywick, TRFA Admin Assistant

Ingredients

1 tablespoon sunflower oil (Yost Farms)
3 cloves garlic, minced (Brandmoore & Willoughby Farms)
2 leeks, washed well and sliced thin
1 tablespoon freshly grated ginger
6 cups mushroom or chicken stock or water (Vernon Family Farm)
4 teaspoons soy sauce
1/4 cup grated daikon radish (Harlow Farm) (Use a very fine grater or blender. It should be a paste)
1/2 pound fresh assorted mushrooms, sliced (Dunk’s Mushrooms)
1 package of Valicenti Ramen Noodles (GF and Vegan) (Valicenti Pasta Farm)
1 bunch of assorted braising greens, stems removed and diced, leaves shredded (Wild Fern Farm)
1 tablespoon rice wine vinegar
Freshly ground black pepper, to taste

Optional Toppings:
Bacon, fried, and cubed (Kellie Brook Farm)
Soft Boiled Egg, sliced in half (Julie’s Happy Hens)
Scallions, thinly sliced

Directions

In a heavy-bottomed pot, add sunflower oil, garlic, leeks, and ginger. Cook until it is softened for about 5 minutes. Next, add soy sauce, daikon, greens stems, and mushrooms, and cook another 8 minutes. Add stock or water and let it come to a boil. Once the pot is boiling, add the ramen and cook per package instructions until the ramen is tender. Turn off the heat, add greens so they wilt but don’t overcook, and season with black pepper and rice wine vinegar. Serve immediately and enjoy!
