Cranberry Apple Crumb

-3RFA Community Experience Guide, Perri Krywick.

 

Ingredients:

 

Filling –

4 large apples, chopped into ½ in. cubes

2 cups fresh cranberries

1/3 cup maple syrup or honey

1 orange, juiced, and zested

2 tablespoons all-purpose flour

½ tsp ground cinnamon

¼ tsp ground nutmeg

 

Topping-

1 cup pumpkin seeds

1 cup all-purpose flour

1 1/4 cups rolled oats

1/2 cup packed brown sugar

1 teaspoon ground cinnamon

A pinch of salt

8 tablespoons (1 stick) cold butter, cut into small pieces

 

Directions:

 

Preheat the oven to 350 degrees F. Lightly grease a 9 by 13-inch baking dish with butter or oil.

 

Peel the apples, if desired, and chop them into ½ in pieces. Place the apples in a large mixing bowl and toss with orange juice and zest, maple syrup (or honey) flour, cinnamon, and nutmeg until well combined. Pour the fruit mixture into the baking dish and spread it out into an even layer. Set aside.

 

In another large bowl, mix together the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Using your fingers or a pastry cutter, gently work in the cold butter until pea-sized lumps are formed. Do not over mix.

 

Top apples evenly with the oat mixture and press down firmly. Bake until the fruit is bubbly and topping is golden brown, about 45 minutes, rotating once halfway through cooking.

 

Enjoy warm or room temperature with vanilla ice cream!
