** Fifth Flavor Catering & Gather NH’s Community Meal

Nina Parrott, of The Fifth Flavor Catering, has assembled a crew of volunteers to help prepare a holiday dinner for
300+ members of Gather NH. On the menu: buttermilk-brined turkey with cranberry sauce, apple cider- glazed ham,
butternut squash soup with coconut + curry (with squash donated by 3River from Brandmoore Farm and onions
from Governor Dale Farm), cumin-roasted carrots (also from Gov Dale Farm), sweet and sour Brussels sprouts,
acorn squash (donated by 3 River from Amish Acres in Maine) with orange + dates, herb roasted potatoes with
garlic + paprika, and mashed sweet potatoes with maple brown butter + sour cream. About 100 local bakers have
signed up to supply the sweet treats: cookies, holiday breads and more.

Nina and crew have been cooking for Gather for a few years now. It started out as a way to use and repurpose
leftovers from large events, since a caterer can’t run “specials” on Monday. Now she does it whenever she can,
hoping to support the tremendously hard-working Cooking 4 Community team at Gather.

Parsnip Soup

“Parsnips and carrots are similar but I chose parsnips for this recipe for a few reasons. Their more fibrous texture
adds a little more bite and their spiced sweetness pairs very well with other spices like cumin, paprika, turmeric,
ginger, and cinnamon. It’s a simple and hearty soup that only needs a side of good bread to complement it perfectly.”

Ingredients:
2 tablespoons extra-virgin olive oil
6 cups parsnips, peeled and chopped

1 cup sunchokes, peeled and chopped ( alternatively, use all parsnips)
4 garlic cloves, chopped
2 teaspoons ground cumin
1 tsp smoked paprika
4 fresh sage leaves
1 teaspoon salt
3 cups water
2 cups veggie broth,
1 cup milk, or alternative milk of your choice

Directions:
In a medium soup pot, heat the olive oil. Add the parsnips, sunchokes (optional), and garlic and cook over moderate
heat, stirring, until lightly golden, 5 minutes. Stir in the cumin, paprika, and salt. Cook for a couple of minutes until
fragrant. Add the water, broth, and milk. Bring to a simmer and cook until the vegetables are soft, about 25 minutes.

Working in batches, puree the soup in a blender until smooth. I recommend keeping a little bit of texture in the soup
by only partially blending a few batches. Pour the soup back into the pot. Add more liquid if the consistency season
to taste with additional salt and pepper.

Serve with A&J King’s Poached Garlic Sourdough bread or a Baguette
